THE PROJECT
A new “DOMUS” named SAFINEIS DOMUS after the Oscan and Latin word : “the Samnite’s home” , was established within the Foresta estate in 2000.
On its premises and its cellars it welcomes tourists, enthusiastic wine-lovers and occasional visitors who share the same desire for traditional delicacies and relaxing, peaceful moments in the setting of a real holiday farm, where the Oscan and Samnite history blends in with wine and food tradition.
Genuine, premium- quality wines, guaranteed by the Foresta brand name, accompany traditional dishes based on ancient recipes and served with care and professionalism in a warm and simple home-like atmosphere.
A memorable experience for the senses, ideal to get away from it all, to explore the estate, either for curiosity or simply for pleasure, to approach our culture, to relish nature’s slow tempo or the traditions of this joyful and generous land. THE
FOOD
Month after month, the watch word here at SAFINEIS DOMUS is seasonality, whether it is breakfast, with the hostess’s delicacies and the enticing aromas of home - made cakes spreading through the estate premises since early morning, or lunch and supper time, with appetizers and main courses cooked using fresh, seasonal produce from our garden, followed by a variety of meat dishes prepared in many different ways based on ancient recipes handed on for generations and adapted to modern cuisine standards.

September : Grape harvest
October : Vinification ,chestnut picking
November : mushroom and olive picking, preparation of olive oil and balsamic vinegar, young wine
December : the pig “mactatio” (killing of)
January: preparation of pork meat sausages
February: preparation of winter desserts and traditional liquors
March: wine disgorging and garden arrangement
April: picking and processing of medicinal plants
May: garden arrangement
June: vegetable picking and storage
July: drying of fruit
August: storage of fruit and vegetables, getting ready for the grape harvest.
All the year round we offer upon reservation:
Guided tours, including a visit to the old medieval tuff cellars and the modern ones
- Excursions and visits to the estate vineyards
- “Didactic farm” for schools , institutes, universities or similar entities
- Ceremonies, private functions, such as birthdays, parties and wedding receptions, or any other form of gathering - - - - - Tasting courses of typical products – wine, oil, cheeses, meats – organized by the estate or other external organizations (Ais, Slow Food etc…)
